Where most mattresses use polyurethane foam, we use GOLS-certified organic Dunlop latex - made with 95% certified organic latex, the highest standard. Our Dunlop latex is sourced from co-owned farmer societies and processing facilities in India and Guatemala, as well as from sources in Asia, and is processed in GOLS-certified organic facilities operating under the USDA's National Organic Program. It is also FSC® certified, verifying responsible forestry practices at the source. Latex configurations vary by model. The Firm uses 2 inches of GOLS-certified organic Dunlop latex (D65 / 14-19 ILD, soft) in the comfort layer. The Extra Firm shares the same 2-inch Dunlop latex comfort layer but uses a different coconut fiber configuration, delivering an even firmer feel (available on a separate page). The Medium features two layers of GOLS-certified organic Dunlop latex - 2 inches in the comfort layer (D65 / 14-19 ILD, soft) and 1 inch in the base (D65), totaling 3 inches. The Plush uses 5 inches of GOLS-certified organic Dunlop latex: 2 inches in the pillow-top layer (D65), 2 inches in the comfort layer (D65), and 1 inch (D65) in the base. Every Avocado mattress includes a layer of pure, naturally crimped organic wool (1 ounce per square foot) beneath the organic cotton cover. Sourced from free-grazing sheep and independently certified to the Responsible Wool Standard by Textile Exchange, our wool contains no additives, synthetics, or blended materials - no rayon, no polyester, no chemical flame retardants. Wool's complex natural structure does remarkable work: it wicks moisture, regulates temperature in both warm and cool conditions, resists odor, and acts as an all-natural fire barrier that meets federal flammability standards without chemical treatments. Its natural crimp provides bounce, body, and soft support. Our mattress cover is made from organic cotton in a soft, natural color, blended with 3% elastane for functional stretch required for tufting and enhanced durability, and is fully compliant with GOTS standards. Responsibly and ethically sourced from India, this fabric is quilted over generous layers of organic wool, silk, and mohair - creating the visibly plush, inviting surface that distinguishes the Ultra-Plush from every other mattress in our line. A thin, non-woven backing layer prevents natural fibers from shifting or working through the outer cotton over time. This backing meets GOTS accessory requirements. Our patent-pending innerspring system features between 833 (Twin) and 1,379 (King) individually wrapped steel coils arranged across seven strategic zones to support hips, back, and shoulders - with a reinforced steel perimeter for consistent edge-to-edge support throughout the life of the mattress. For our Medium, Plush, and Ultra Plush, three wire gauges are placed with purpose: 16-gauge (narrow diameter) perimeter coils reinforce the sides and header/footer zones; 15-gauge coils run through the center third; and 14-gauge (larger diameter) coils flank both sides of the center section, supporting the shoulder and hip areas equally, because our mattresses are designed to be rotated regularly. Our Firm uses an 8-inch coil unit, with three wire gauges and up to 1,337 individually wrapped coils arranged across seven ergonomic zones. Our Extra Firm uses two 3-inch coil units (14-gauge) separated by an organic-latex-infused coconut pad, resting on an organic hemp fiber pad, for maximum support. Each coil floats independently within food-grade, non-woven polypropylene fabric to improve airflow, support, and spinal alignment. Coils are heat-treated and stress-relieved, manufactured by Avocado from recycled steel wire, and assembled using an environmentally conscious adhesive composed of tested components (Waxes: CAS 8002-74-2, Resin: CAS 8050-26-8, Antioxidant: CAS 6683-19-8, EVA Polymer: CAS 24937-78-8). | NEEDLE-TUFTED BY HAND |
Most mattresses bond their comfort layers together with chemical adhesives: a faster, cheaper process that introduces synthetic compounds into the layers closest to where you sleep. We don't use adhesives to keep everything together. Instead, every Green Mattress is needle-tufted by hand at our Fullerton, California, facility: a long needle drives a fabric ribbon through the full depth of the mattress and caps each end with a soft wool rosette, mechanically anchoring every layer in place. The result is a mattress that retains its shape, support, and material integrity over time - no off-gassing from bonding agents, no bonds that weaken with nightly use. It's one of the most labor-intensive bedmaking methods and a hallmark of quality.

All Avocado Green Mattress models are assembled in Fullerton, California, with domestic and imported materials consisting of natural latex foam rubber pad, natural wool fiber, and a coil spring unit, plus a fabric cover of organic cotton (97%) and elastane (3%), which provides stretch and recovery in the knit cover. Our Extra Firm model uses two coil units plus latex-infused cocofiber pads. No polyurethane foams, memory foams, chemical adhesives between comfort layers, or chemical flame retardants are used.
